Chemex Brew Instructions

The Chemex coffee brewer dates all the way back to 1941. It features a thicker filter paper for an exceptionally clean cup of coffee. Chemex sizes range from three to ten cups, so they are a perfect brew method for a group of people.

What you will need:

  • Chemex brewer and filters
  • Fresh coffee
  • Coffee grinder
  • Scale
  • Kettle

You want to heat your water to 200F in your kettle. Wet down the entirety of the coffee filter and then dispose of the rinse water. This will help clear any papery flavor before you brew your coffee.

 


Weigh out your coffee beans to grind. We will be using 40g of coffee for this recipe. If you are using pre-ground coffee you can just weigh out 40g into your Chemex.

Most grinders come with a guide for what setting to use for different brew methods. We have found that 15 on the Baratza Encore grinder works well for our coffee

Place your ground coffee into your Chemex.

We are going for a total of 600g of water in this recipe for a ratio of 1:15 ground coffee to water. Begin by pouring in 60g of water to bloom to the coffee - helping it release the gases. Make sure to pour all around the coffee in a circular pattern so that the entire bed is wet. Let it sit for about 45 seconds.

Continue to pour water in as the coffee drains. We are aiming for a total brew time of around four minutes. We want to hit the final brew weight of 600g around three to three minutes and 15 seconds.

Once your coffee has finished brewing you are ready to serve and enjoy!
