Kalita Brew Instructions

The Kalita Wave got its start in Japan in the 1950s.
What you will need:
  • Kalita Wave Brewer and filters
  • Fresh Coffee
  • Coffee Grinder
  • Scale
  • Kettle
You can either brew the coffee into a pitcher, or straight into your cup.
Rinse out your filter with hot water, making sure to dispose of the water before brewing the coffee.
We are aiming for 1g coffee to 15g water recipe. We recommend using a 14 setting on the Baratza Encore. This will be a medium-fine grind level. 
We measured out 20g of ground coffee and add to filter. Give it a good shake to even out the coffee bed.
We will be using 200F water for this brew. Since we used 20g of coffee, we want to use 300g of water. We are aim for a brew time of 3 minutes. 
Pour your first 100g of hot water onto the coffee bed, making sure to evenly wet the coffee. Wait around 30 seconds.
Continue to pour the remaining 200g of water, stretched over the remaining two and a half minutes. Use a spiral motion, starting in the center of the coffee bed and pouring to the outside edge.
After you have finished pouring all of the 300g of water, let the coffee rest for about a minute to finish draining.
