The El Paseo Farm is owned by Huber Castillo, who inherited the land from his father and has been growing coffee ever since. Huber is the second generation of the head of producers in his family and since then, he has worked in coffee farming as a means of putting into practice his knowledge as an agricultural engineer and his passion for coffee. 

The farm is located at 1900 m.a.s.l.; it represents a broken topography, with an average climate of 28 to 30 Celsius, a reserve area where native varieties of trees are found, such as cedar, pine, and myrtle. Huber operates a system of cultivation under shade which allows it to have soils rich in organic material and at the same time protects the plantation from inclement weather, thus improving productivity and at the same time the quality of the fruits.

On the farm, four fertilization processes are carried out, distributed every three months and each one of 100 grams. The farm has Castillo variety, with an average age between 3 to 5 years, it is arranged on 5 hectares of which 1 hectare is a protected reserve area in which there is a diversity of flora and fauna native to the region.

The fermentation process was carried out in two stages, one anaerobic in cherry and the other submerged in an open environment once the cherry has already been pulped and inoculated with lactic acid precursor bacteria. The purpose of this process is to provide the right conditions so that most of the sugars available in the grain are fermentable and to collaborate with the inoculation of a bacterial culture to increase the viable colonies that can be inhibited in previous stages of fermentation, all with the aim of obtaining a well defined and characteristic profile on the final drink.
